I made a little something strange for dinner tonight.
It’s actually something I’ve been thinking of making for a quick breakfast but I decided to try it out tonight since Mr. Won’t Run was working. A sweet potato scramble (Koko was really hoping I’d drop some):
But since I need a quick breakfast option if I’m going to eat anything in the morning I figured out how to make it in the microwave in less than five minutes!
I bought two huge sweet potatoes the other day, diced them both up and wound up with almost eight cups! I left the skin on – partly because I’ve heard there are nutrients in it, and partly because I just didn’t feel like peeling.
I put a cup of diced sweet potato in a bowl with one Tablespoon of water and then microwaved for two minutes which turned out to be a perfect amount of time. I scrambled up two eggs and mixed them into the potatoes and then microwaved for another 90 seconds. I feel like they overcooked a little so next time I’ll check it at 60 seconds.
I spiced it up with some Tapatio and that was that!
I’ve seen others talk about sweet versions with butter and brown sugar, a granola crumble type topping, maybe some nut butter and/or coconut butter, and I’m sure I’ll try a variety of those. I love sweet potatoes and they seem like a viable option for a healthy breakfast.
According to North Carolina Sweet Potatoes, one medium potato has 103 calories, 0g Fat, 24g Carbs, and 4g Fiber. It’s also extremely high in Vitamin A which is good for your eyes, your reproductive and immune systems, and you skin. And if I’m being honest, a vain benefit like good skin and less wrinkles will get me every single time!
So tell me, do you have a good go-to resource for in depth vitamin info?
I wanted to include more legitimate info here on Vitamin A but couldn’t find the type of resource I wanted.
I did have another good, quick, to-go type breakfast this morning that I didn’t even have to make myself. My work friend, Brooke, commented on Sunday’s post with a link to some overnight oats and today she brought me one and it was delicious!! Those will definitely be making an appearance in between the sweet potatoes!
