Today was productive.

I mentioned yesterday that I was going to start on this whole meal planning thing and I did!

I picked some recent recipes I had pinned which used some ingredients I already had.  That’s one of my goals, use the things in my pantry instead of always buying new stuff which will also help keep the grocery bills down.

I picked some recipes, listed the ingredients, crossed off what I already had, then shopped for the rest.  I was in and out of that grocery store in less than 15 minutes!  I brought it all home and prepped everything that I could think of.

Baked Chicken Chimichangas from The Girl Who Ate Everything

 

  • I made these today and I liked them but Mr. Won’t Run didn’t.  He said they were like Taco Soup in burrito form.  He doesn’t like Taco Soup.  So, they’ll be for me and I’ll take them for weekday lunches.
  • Called for 1 1/2 cups of chopped onion and I chopped the whole thing which ended up being 2 1/2 cups so I bagged the excess and stuck it in the freezer for another day.

Baked Blueberry Coconut Oatmeal from Two Peas and Their Pod

 

  • I made this today and I liked it but Mr. Won’t Run didn’t.  Wait, didn’t I already say that??  Yep, I’m 0 for 2 tonight with the Mr.  So, this recipe will be for me and I’ll take it for weekday breakfasts.  Yeah, this is sounding familiar.

Cheeseburger Casserole from Skinny Taste

 

  • Cooked the pasta
  • Chopped the onion
  • Grated the cheese
  • Chopped the pickles
  • Calls for garlic and I’ll just use the jarred stuff because I already have it.
  • Probably could have cooked the meat up with everything in it, might do that tomorrow, then I can combine it with the noodles on Monday night to get dinner into the oven even faster.  The faster the better on a Monday!

Indian Butter Chicken from Mel’s Kitchen Café

 

  • Chopped the onion
  • Chopped the chicken
  • Chopped Grated the ginger
  • Combined the spices
  • Calls for garlic and I’ll just use the jarred stuff because I already have it.
  • Called for a chopped jalapeno and those are totally cheap but I had a can of diced jalapenos in the pantry so I portioned that out and stuck the rest in the freezer.

Spaghetti Aglio e Olio from Pastini Pastaria

 

  • I didn’t prep anything for this one, it’s just spaghetti with olive oil, garlic, chili flakes, and parmesan so it should be easy enough to toss together one night.

And that’s it.  I didn’t do a dinner for all seven days, or even just five days, since the Mr.’s work schedule can vary.  I don’t always know until about 4pm if he’s going to be around for dinner or not, and since there should be some leftovers I figured what I have is planned is plenty.

It’s also a good way to ease into the whole meal planning thing instead of trying to do breakfast, lunch, and dinner for all seven days for my first meal planning experience.

Now the hard part is waiting because I’m excited to try these and finally cross some things off my Recipes to Try board.  With almost 800 pins I have lot of meal planning material to work with!
